ingredients:

1 tbsp vegetable or olive oil
1 small onion, finely sliced
2 cloves garlic, crushed
1 thumb-sized piece fresh ginger, grated

1 litre chicken stock (low-salt)
1 skinless chicken breast or thigh, thinly sliced
100g egg noodles or rice noodles
1 carrot, cut into matchsticks
