We were excited to welcome Chef Oscar back to SIATech NCIS for the fourth year in a row. As a former instructor at the California Culinary Institute and the owner of a churro shop in Tijuana, he brings so much skill, heart, and real‑world experience to our students. This year, he guided us through making a full meal from scratch: Alfredo pasta, garlic bread with herb‑garlic butter, and perfectly steamed broccoli. Along the way, he taught us foundational kitchen techniques like making a mirepoix (a mix of chopped veggies used for flavor), a roux (a cooked blend of butter and flour), and a béchamel (a classic white sauce). We combined all of that to create our own Alfredo sauce from the ground up. Our students learned, cooked, laughed, and ate together — the best kind of classroom. Huge thank you to Chef Oscar for continuing to pour into our school community.
