Going out to eat can be stressful when you eat healthy. Are there seed oils? Is anything fresh? Do they use organic ingredients? Is it vegan junk? Are they being honest about their quality or ingredients? So for the most part we don’t go out to eat. However…….. there are a few amazing places that I trust 100%. is one of them. Their quality is amazing. The food is real and you walk away feeling so good. I’ve never not been impressed with the food I’ve had and can’t wait to have more. Now if we can just get them to open up shop in Utah… 😉

2024 has been the absolute best year! So many blessings, so much goodness, so many opportunities, so much growth and more happiness than I could have ever imagined. Praise the Lord! 🙏🏼😊❤️ We just got back from a long break in Puerto Rico and boy did I need it! Here’s where I get to the educational part…
I wore a 2 piece swimsuit the whole time. 😳😮🫢 My whole life I tried to be modest and hide my stomach when wearing a bathing suit. I also spent my whole life vitamin D deficient! Once learning how important vitamin D (aka the sun) is and learning the sun absorbs best in the stomach area, I decided to leave my fears behind and spend time with my stomach exposed to the sun. Turns out data backs this up, stomach exposure to the UVB light boosted gut microbe significantly in one study. It has also been shown to boost immune system and help with calcium absorption. I can attest to all of these benefits as well as improved mood and much higher vitamin D levels! Even if you aren’t comfortable going out in public exposing your stomach, go in your backyard or lift up your swimsuit for 20-30 minutes to get some good UVB exposure. It’s well worth it.
Oh and ps. Puerto Rico was amazing and I was so proud of this picture .gundersen snapped of me on the beach. 😍 It feels amazing to be in my 30s and still wearing the same size that I did in high school. My hard work has been paying off.

Do you make your own food? A recent survey found that 63% of Americans eat out 2-3 or more times a week! People spend an average of 10k a year eating out. You guys!!! That’s insane. That’s enough to buy a car in cash. Can you imagine all of the oils, preservatives, toxins, carcinogens, etc. that you get when you go out to eat. It’s not only cheaper but also way healthier to make your own food from scratch. It doesn’t have to be hard! A smoothie takes under 2 minutes to make. Can we make a commitment to spend less on eating out and more on eating real food at home? 🙋🏼♀️

I didn’t sleep the entire night before I spoke at this virtual conference last week… and I was exhausted!! But once I started speaking I couldn’t help but get all excited and geek out about the nutritional studies and biological data. I got to share true knowledge about health that left every one of us who was gathered together to feel more the energy. When truth is presented it just resonates. You know? Your spirit leaps within you and is like “yesssssss! This is it. This is right”. That’s how I feel about eating a real food plant diet. My spirit is like “yup. This is truth”.
I’m not so prideful to think I’m absolutely right on nutrition and everyone else is wrong. I’m open to being wrong and going back to eating meat at any time. I pray daily to know if I’m on the right track. I read all the conflicting studies and data to see if it’s compelling and done correctly. But every-time I consider it, my spirit and quite frankly the spirit of God says to me, come on you know better. Truth resonates and that’s one of the main reasons I know that the route I’m on, is from God and is right for me.
When you’re conflicted and confused. When you are swayed by naysayers or data that challenges your viewpoint, don’t be scared. Take a moment of introspection, does it resonate and feel right? Does the spirit confirm it? If not, maybe you need to look at changing things. If it does, move forward with your head held high and realize that you are on the right path.

Lentils are a WONDER food, especially when raw and sprouted! They are rich folate, thiamine, magnesium, phosphorus, zinc, copper and manganese.
Additionally they are rich in Polyphenols which are antioxidant, anti inflammation, and neuroprotective. In lab studies, lentils stopped cancer growth on the spot!!
It has also been found to protect and reverse heart disease and diabetes.
Lentils should be apart of your diet!! Soak and sprouting them is best, but you can cook them too if you aren’t there yet. 😜 Who wants lentils???

Green smoothie. 🥬🥦🥒🥑🌿
No matter where you stand on your health this is something you can incorporate. Just add some bananas, another complimentary fruit or two and bam. I’ll tell you a few of my favorite addins for a smoothie.
🌱Aternating ANY greens: kale, beet green, spinach, watercress, purslane, romaine, butterlettuce, comfrey, etc. and put lots of them. I like to do a whole blender full.
🌱Add in my super nutrition foods, barley grass powder, alfalfa, spirulina, dulse, etc.
🌱 Alternate h**p, flex and chia 1 TBSP
Boom! You’ll have a smoothie like mine and you’ll be so incredible. Greens really do heal, no matter what disease or problems you have. So if you can’t handle salads just do a green smoothie!
