Free Recipe in the : Creamy Mushroom Soup! It's the weather for it, hey? 🥶

2 garlic cloves, peeled
1 brown onion, peeled and halved
40g olive oil
600g mixed mushrooms, roughly chopped
6 fresh thyme sprigs, leaves picked
3 sprigs parsley, leaves and stalks
700g water
70g stock concentrate
5g dried porcini mushrooms
½ tsp fine salt + extra if needed
50g cream + extra to serve

1. Place garlic and onion in TM bowl, chop for 5 seconds, speed 5. Scrape down sides.

2. Add oil, sauté for 5 minutes, 100°C, speed 1.

3. Add mushrooms, thyme and parsley stalks, chop for 10 seconds, speed 4, assisting with spatula.

4. Sauté for 8 minutes, Varoma temperature, speed 1, MC removed and steamer basket on top to prevent splashes.

5. Add water, stock concentrate, porcini mushrooms and salt, cook for 10 minutes, 100°C, speed 1.

6. Puree for 45 seconds, slowly increasing from speed 1 to 9. Taste for salt, adding more if needed, or if flavour needs lifting.

7. Add cream, mix for 10 seconds, speed 4.

Enjoy!! Save for later.

You know those lazy weekend mornings… you’d love a sweet pancake stack for breakfast, but the thought of leaving the house for ingredients just kills the dream (who wants to change out of pyjamas!). Well that was me recently… empty fridge and freezer - not even a slice of bread to be found! And pancakes were calling me. So, I set about creating a pancake recipe that you and I can whip up any time, without leaving the house! Using ingredients I always have in the pantry… making life just that little bit easier is always my motto. These are soft, sweet and fluffy… frankly, they taste a lot like the ‘shaker’ pancake mixes from the supermarket, but without the price tag, the crappy added ingredients and the waste.

Here's something I reckon a lot of owners need to hear - and it might surprise you coming from me.

You don't need to cook everything in it.

I see it all the time - people trying to make their Thermomix do literally everything, and accidentally making life harder in the process. A failure of many users is trying to do everything in the Thermomix, inadvertently making life harder!

The machine is truly brilliant. But some dishes just work better on the stove, in the oven, or in a slow cooker. And that's OK.

What the Thermomix IS the absolute best at? Combining multiple cooking functions at the same time - heating and stirring together. That's something no other appliance can do. Think risotto, custard, porridge, soup, jam, polenta, dahl, hot chocolate, pudding.

And for everything else, it's your ultimate sous chef:

→ Chopping onions, garlic, chilli and ginger in five seconds

→ Milling spices and nuts

→ Sautéing the base of a curry before you pour it into the slow cooker

→ Making the sauce while the protein does its thing in the oven

Secondary cuts of beef like chuck, flank, blade and shanks? They need a long, slow cook to become tender and delicious - and the constant stirring doesn't do any favours. But the Thermomix can do ALL your preparation, then pour it into a casserole dish and let the oven work its magic.

Still minimal effort. Still brilliant results. Just used the right way. And not having you feeling like a failure!

Such a classic dessert, made so easy in the Thermomix! Whip up the batter in the thermie bowl, pour into our non-stick silicone dariole moulds and then steam in the Thermomix Varoma. Delicious served hot or cold, it’s hard to find someone who doesn’t love a sticky date pudding! We’ve kept the eggs, dairy and nuts (optional) out of the recipe so it’s suitable for a range of eating preferences, lunchboxes etc, but honestly there’s no loss of quality so it’s always my go-to recipe regardless (and I’ve always got all the ingredients in the pantry which really helps!).

Why is my fudge friendly you ask? Because it’s made with six nutritious, real-food ingredients, no nasties and almost everyone can enjoy it! It’s dairy free, gluten free, soy free, egg free, refined-sugar free, vegetarian and vegan (really sorry to those with peanut allergies). It couldn’t be simpler to whip up, it will absolutely cure any chocolate craving, and it freezes perfectly… making it a very convenient recipe! I hate to use this term, but it actually tastes too good to be healthy 🤣 And look how fudgey it is!!

The secret to silky smooth fresh pasta is in what I call the 'extra passes'. No matter how you're making your pasta - Thermomix, no Thermomix, electric pasta machine or manual pasta roller - the trick is to give the dough about six passes through on the widest setting before attempting to roll thinner. These extra passes truly transform the dough - you'll see it in front of your own eyes! Trust me, it's worth the extra little effort.

Sometimes the most sensible thing you can do is shut the kitchen door, turn the music up, and bake a big batch of caramel slice in the . This is one of those free recipes you'll bookmark and come back to for years.

Here's why this caramel slice works - the caramel layer turns out perfectly soft (no graininess, no ice block, no over-cooked sticky mess), the chocolate sets with a proper snap, and the base doesn't crumble when you cut into it. The little secret? The machine holds the temperature steady and stirs for you, so you skip the whole "20 minutes hoping the caramel doesn't catch on the bottom of the pan" stress.

Here's the bit I wish more people knew about my Flavour Bomb Salt and No-Chicken Chicken Salt - they don't need heat to bloom.

Most spice blends only really come alive once they hit a hot pan. Would you want to eat them straight from the packet? Not a chance! Whereas mine are bursting with flavour straight out of the bag, **ready to go**. Finger licking goodness.

Which means: sprinkle them over a salad, season your dinner at the table, or chuck a pinch on a buttery slice of sourdough. Sure, they're great to cook with, but the point is - you don't *have* to.

Honestly the simplest seasoning upgrade you'll ever make. Handmade entirely from REAL, ORGANIC ingredients.
