Warm Winter salad - perfect nourishing lunch đ
I love roasting pumpkin in winter, you can throw it in a salad, a soup or add to your dough for your next batch of lunchbox scrolls.
Warm up a portion of brown rice, add veggies, a bit of feta or halloumi some nuts and seeds and youâre good to go.
Another favourite of mine is roasted sweet potato. Whatâs your favourite roasted veg?

In the incursion, students also learn about eating a rainbow of vegetable and fruit, why itâs important to tune in and listen to their body and ask whatâs in my food, as well as learning about the connection between food and our amazing planet.
