Micro Macro Forest School

Oh how we loved this curry !
Sweet and sour tang just the way I like it....
As usual.not sure of the quantities - start with less spices and add more to taste at the end?

Recipe :
Place in order in pot
1st Coconut oil
Onions x 1 big (chopped small)
Slow cook
Then:
Garlic x 5 cloves
Ginger x thumb sized peice
Coriander x 1 heaped teaspoon ground
Cumin x 1 heaped teaspoon ground
Slow fry off the above
Then:

2 x Butter beans
1 x Coconut milk
1 x Coconut cream
Water
1 tbs Tomato puree
1 tbs Tamarind (runny or softened in water)
Quinoa x 150g
Juice of a lime
1 tbs mango chutney ! ( shhhhhhh...)
Dessicated coconut x 2 tablespoons
Salt
Slow simmer stiring frequently so quinoa doesn't stick...
Approx 25 - 35 mins

Serve with mint, lime, chilli flakes, mango chutney.
