From traditional preservation techniques to iconic regional preparations, the Rajasthani immersion offered a meaningful exploration of one of India’s most distinctive culinary traditions.
Guided by Chef Hari Singh and external culinary experts, associates from The Oberoi Hotels discovered the flavours, ingredients and techniques that have shaped Rajasthan’s cuisine over generations. Through dishes such as Papad Paneer Subzi and a variety of traditional pickles and preserves, participants experienced the resourcefulness and heritage at the heart of desert cooking.
Along with practical learning, the workshop provided deeper insight into the cultural significance and stories behind every preparation, making it a truly enriching experience.

A proud moment for the OCLD family.
OCLD alumni Chef Vikrant Arora, Senior Sous Chef at The Oberoi Rajgarh Palace, Khajuraho and Chef Veeram Sukhwal, Senior Sous Chef at The Oberoi Rajvilas, Jaipur, have been selected by the Indian Federation of Culinary Associations (IFCA) as national candidates for the Bocuse d’Or National Selection India.
Recognised as one of the world’s most prestigious culinary competitions, the Bocuse d’Or celebrates exceptional craftsmanship, creativity and precision. This achievement reflects years of dedication, perseverance and a commitment to culinary excellence.
As they take this important step on their journey towards the opportunity to represent India at the Bocuse d’Or in Lyon, France, in 2027, we wish them every success in the challenges ahead.
