Another fun fact: roti jala isn’t just about the batter. the pattern actually depends on how steady your hand is and how evenly you move across the pan. Same mix, different flow and you’ll get a completely different net every time.

Fun fact: a lot of “perfectly cooked” home meals actually come down to heat control more than anything else. Too low and everything turns soft, too high and things get chaotic fast. It’s usually that middle ground that makes cooking feel like it finally clicks.
Even something like nasi lemak feels simple, but getting the rice fluffy and the sambal just right is really about that balance more than anything else.

Char kuey teow always comes with a bit of attitude, it doesn’t really behave. You either get the wok right, or you don’t. But that’s what makes it fun, right? 😄
