You want to make that moi moi that leaves you craving for more.
First of all, you have to learn what works. I know you believe that more Crayfish means more taste.
I know that you are a cray fish ambassador and my try to argue with me. Believe me, give something else a trial maybe just maybe you will see better.
Invest more on onions. You know the amount of Crayfish you plan to use, convert it to onions.
Use very good tatashe and Shombo for the absolute Colour. You don't need artificial Colours.
If you use more Crayfish, once the moi moi is cold, the Colour will change and become dark. It's only soft when it's hot. So if you at all should use, let it be sparingly.
If you can use a mixture of Habenero pepper, nutmeg, for half custard of beans, I used 2 medium Sized.
Mix your batter with warm water. Not cold.
To take it a step further, use broth from brisket bone or stock from fish
You can also debone smoked or ice fish and add.
Cooked eggs are usually for aesthetics, they do not add flavor to the moi moi.
You can add one or two whole raw eggs inside the batter. Also helps with the fluffiness.
You may decide to blend the pepper mix and Sautee them aside before pouring into the batter however it doesn't entirely matter if you are bulk producing so just blend direct.
Season well, add the correct quantity of oil, use warm water to mix then you have it.
I know you already know how to cook but don't mention it.

You want to make coconut rice that people eat and keep asking for more.
Use this recipe below.
First thing first, prepare a good coconut milk, enough of it. Whether you want to buy from the store or you are DIY just get the best coconut, grate, soak in warm water then blend and juice out. Keep juicing until all the milk is out then set aside.
Ingredients
Long grain rice (washed and set aside)
Coconut milk
Protein (fish, meat)
Habenero pepper
Onions
Seasoning cube
Whole tomatoes (2/3)
Ginger and garlic
Salt.
Crayfish (optional)
Method
1. Heat up oil and Sautee ginger, garlic and onions until it's fragrant.
2. Add the washed rice and stir fry for 6 - 7 minutes, pour in the stock just about 1/4 of the entire liquid needed.
3. Pour 1/2 of the coconut milk, add Habenero pepper, fish, etc
4. Adjust the seasoning and allow it to boil then reduce the heat.
5. When the water has dried a bit, add the remaining coconut milk to the rice, to completely get into the rice and simmer it, then add the chopped whole tomatoes, I can't say but I like how this gives my coconut rice a beautiful look.
Not much but like 2/3 depends on the quantity of rice.
6. You can cover with a foil to trap the flavours within.
7. Once the rice is completely tender, take off the heat and serve.
Key note: if you want to use Crayfish, endure it doesn't overshadow the taste of the coconut milk. The essence of coconut rice, is the milky feel of the coconut.
Use enough onions.
