Their study explores the development and nutritional evaluation of freeze-dried instant rice and mung bean meals designed for emergency food supplementation. The research highlights the potential of locally sourced ingredients and food processing technologies in creating nutritionally adequate, shelf-stable, and accessible food products that can support disaster preparedness and emergency response initiatives. Through its findings, the study contributes to the advancement of food science, nutrition, and food security research while addressing pressing societal needs.

This publication further strengthens the Colegio’s commitment to research excellence and innovation, showcasing the valuable contributions of its faculty members to international, peer-reviewed scholarship and the broader scientific community.

LOOK: The Research and Publication Department (RPD), in collaboration with the Office of the Vice President for Academic Affairs (OVPAA) and the Human Resources Department (HRD), successfully conducted 𝐏𝐫𝐨𝐣𝐞𝐜𝐭 𝐓𝐎𝐑𝐂𝐇 𝟐𝟎𝟐𝟔: 𝐒𝐭𝐫𝐚𝐭𝐞𝐠𝐢𝐜 𝐏𝐚𝐭𝐡𝐰𝐚𝐲𝐬 𝐭𝐨 𝐀𝐈-𝐄𝐧𝐚𝐛𝐥𝐞𝐝 𝐓𝐞𝐚𝐜𝐡𝐢𝐧𝐠, 𝐑𝐞𝐬𝐞𝐚𝐫𝐜𝐡, 𝐚𝐧𝐝 𝐂𝐮𝐫𝐫𝐢𝐜𝐮𝐥𝐮𝐦 𝐃𝐞𝐯𝐞𝐥𝐨𝐩𝐦𝐞𝐧𝐭 on May 15, 2026, at St. Thomas Hall.

The seminar gathered faculty members for a collaborative learning experience on AI integration in teaching and learning, redefining methodological frameworks, and microcredentialing and digital education strategies through insightful sessions delivered by Dr. Glen Mangali, Ph.D., Asst. Prof. Louie Giray, MA, LPT, and Engr. Ericson D. Dimaunahan.

As a prelude to Academic Summit 2026, this initiative takes part of the Colegio’s continuing commitment to research excellence, innovation, and transformative education in the age of artificial intelligence, aligned with the United Nations Sustainable Development Goals (SDGs): SDG 4 – Quality Education, SDG 9 – Industry, Innovation, and Infrastructure, and SDG 17 – Partnerships for the Goals.

IN PHOTOS: Colegio de San Juan de Letran Manila participated in the 4th Philippine International Tourism and Hospitality Research Conference (PITH-ReCon 2026), held from April 22–24, 2026, in collaboration with the University of Santo Tomas College of Tourism and Hospitality Management and the Intramuros Administration. The conference convened academic and industry leaders to advance discourse on sustainable transformation and innovation in tourism and hospitality.
The opening was led by Rev. Fr. Raymund Fernando P. Jose, O.P., Rector and President, followed by a message from Dr. Eric B. Zerrudo of the National Commission for Culture and the Arts.

Keynote sessions featured Ms. Catherine C. Agustin of the Department of Tourism–NCR, Assoc. Prof. Ada Lo of Hong Kong Polytechnic University, Dr. Nisha Abu Bakar of World Women Tourism, and Hon. Faustino “Inno” A. Dy, National President of the League of Municipalities of the Philippines.

A message was delivered by Atty. Joan M. Padilla of the Intramuros Administration, with closing remarks from Prof. Atty. Gezze Giezi G. Granado of the University of Santo Tomas.

The Colegio, together with UST and the Intramuros Administration, advocates for sustainability, inclusivity, and innovation in the tourism and hospitality sector.
