🧁🇺🇸🥤 4th of July PEPSI Cupcakes 🥤🇺🇸🧁

Ingredients:

For the Cupcakes:

1 box (15.25 ounces) white cake mix
1 cup PEPSI® cola
3 large egg whites
1/3 cup vegetable oil
Red and blue gel food coloring

For the Frosting:

1 cup unsalted butter, softened
4 cups powdered sugar
2–3 tablespoons PEPSI® cola
1 teaspoon vanilla extract
Red and blue gel food coloring

For Decoration:

Red, white, and blue sprinkles
Mini American flag picks (optional)
Star-shaped sprinkles (optional)

Directions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
Prepare the Batter: In a large mixing bowl, combine the cake mix, PEPSI®, egg whites, and vegetable oil. Beat for 2 minutes until smooth.
Color the Batter: Divide the batter evenly into three bowls. Leave one bowl white, color one bowl red, and color the other blue using gel food coloring.
Fill the Cupcake Liners: Add a spoonful of each colored batter into each liner, layering or swirling gently to create a patriotic marbled effect.
Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Cool Completely: Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Make the Frosting: Beat the softened butter until creamy. Gradually add powdered sugar. Mix in the vanilla extract and PEPSI® until smooth and fluffy.
Color the Frosting: Divide the frosting into three portions. Leave one white, tint one red, and tint one blue.
Decorate: Place the frostings side-by-side in a piping bag fitted with a large star tip. Pipe swirls onto each cupcake to create a red, white, and blue effect.
Finish and Serve: Top with patriotic sprinkles and star decorations. Serve and enjoy your festive holiday treat!
