We have a weird one for y’all!  After the Red and Yellow Caturra cherries are picked at peak ripeness, they undergo a 4 hour pre-fermentation on tarps. They are then transferred to airtight tanks where they undergo 7 hours of anaerobic fermentation with the addition of the bacteria Lactobacillus Plantarum. This process gives the coffee a beautiful balance of fruitiness, creaminess, and lactic acidity.

Once a month, we open up our quality control cuppings to all of our staff in order to grow and develop our pallets together! Not only is cupping coffee is a key part of making sure everything tastes great, but controlled and reliable way to experience all the nuance and complexity in those beans. Plus, who doesn’t love to waxing poetic about tasting notes? My coffee tastes like a warm summer day? Is that a touch of jasmine? A whisper of dark cherry?
