Grab a glass of something summery! Try this spritzer made with cucumbers, mint, lime juice, a little vinegar, and seltzer. below.
Cucumber Lime
Spritzer (Makes 8 1-cup servings)
2 C cucumber, diced
1/2 C seasoned rice wine vinegar
1/3 C sugar
1/4 C fresh mint leaves chopped
1 T fresh lime juice
6 C seltzer or sparkling water
Garnish: Cucumber slices and mint leaves
-Place first 5 ingredients in a blender and blend until smooth.
-Fill glasses with ice, add 1/4 C cucumber puree and 3/4 C seltzer to each.
-Garnish with slices and leaves and in style!
